Actual product development begins. Prototypes are put through rigorous trials.
Checks and considerations at this stage include:
- are ingredients easily available at the right price (sourcing and procurement)?
- can existing machinery be used to make the product or is new machinery needed?
- is the product safe and legal?
- HACCP (Hazard Analysis and Critical Control Points)
- is the product’s shelf-life retained at different temperatures?
- is the eating quality the same throughout the product’s shelf-life?
- is the packaging attractive and informative and is it in line with product targeting in the market place?
- does the packaging provide suitable protection during transportation?
Marketing development also takes place. An appropriate product name is chosen and registered. Careful checking is needed to make sure the name is unique and suitable for international use – it must not mean something inappropriate in another language or culture.
