the box method
The Box method of fermentation is more likely to be used on the larger plantations in the West Indies, Latin America and Malaysia.
It involves the use of wooden boxes with drainage holes or gaps in the base to allow the passage of air and the removal of liquid products of the fermentation process.
The beans are covered with a layer of banana leaves or sacking to conserve the heat, and stored in a building for 6–8 days to give some protection from the weather.
Once fermented, special drying equipment is used to dry the beans.
This is an important stage because any beans that are not stored properly could go mouldy when stored.
